- Koshihikari is one of the most, if not the most popular Japanese short-grain rice known for its sweet taste and slight stickiness. It is harvested from the Niigata Prefecture. This variety of rice accounts for almost 40% of rice production in Japan. Musenmai means no-wash rice. Due to modern japanese technology, the traditional process of washing japanese rice to remove the hada nuka or skin bran, is no longer necessary.
